How it began
Our story
Lauren and Gary’s story brings together two very different worlds—although both require early mornings, long days and the ability to stay calm when life becomes unpredictable.
Lauren, the second daughter of Paul and Sara, spends her working days behind the wheel of an ambulance, helping people when they need it most. Gary, the son of Margaret and John, comes from generations of farmers and is happiest working the land, surrounded by fields, livestock and the unmistakable rhythm of farm life.
Together, they have created a wonderfully busy family life with Alana Leigh, Lauren’s eldest daughter, and Poppy, the daughter Lauren and Gary share. Poppy’s name even began as a family joke from Paul and Lisa: with Gary’s surname being Sellers, they thought it would be rather fun to call her “Poppy Seller.” The joke stuck, the name was perfect, and Poppy she became.
Completing the family is Bailey, Lauren’s much-loved horse, who naturally believes he deserves almost as much attention as everyone else.
Their life may involve ambulance shifts, muddy boots, farm work, school runs, horses and plenty of organised chaos—but at the heart of it all is a family filled with love, laughter and adventure.
Now Lauren and Gary are preparing for their greatest adventure yet: becoming husband and wife, surrounded by the people who have helped make their story so special.

The Bolholt Country Park Hotel have a wide variety of room types which include various types of family rooms, standard doubles, twins and singles. They also have upgraded rooms which consist of executive bridal suites, our honeymoon suite and our garden suite. All rooms are en-suite and have free wifi, complimentary use of the leisure facilities at The Stables Country Club and complimentary tea and coffee. They also have selected rooms which are pet friendly and rooms which can be modified to be accessible. Upon arrival you will be welcomed by the friendly reception team, who are dedicated to ensure all guests have a comfortable and relaxing stay.
